Berry Basil Compote

This berry compote has just the right amount of sweetness with a hint of basil.  There is no added sugar and it only takes 10 minutes to make. It's the perfect topping for pancakes, waffles, yogurt, or ice cream!



Berries are low in sugar and high in antioxidants so they're a great choice if you're looking to add more fruit to your diet.  Studies have shown that increasing your intake of berries can lower the risk of Type 2 Diabetes and reduce blood pressure.  



Interestingly, in addition to other common health benefits, blackberries and blueberries may also improve cognitive functioning.  Studies have shown that both of these berries can improve short and long term memory in adults.





Ingredients

  • I cup blackberries

  • 2 cups blueberries

  • 2 tablespoons water

  • 1/4 teaspoon lemon juice

  • 2-3 basil sprigs

Directions

  • Add all ingredients to saucepan over medium heat

  • Gently crush fruit with a wooden spoon

  • Once mixture starts to bubble reduce heat to low and let simmer for 10 minutes

  • Remove from heat and pull out basil sprigs

  • Let cool for 20 minutes

  • Enjoy!
