Chocolate Berry Truffles


These delicious little bites are made with just 5 ingredients and have the perfect light and airy texture. They are vegan, gluten free, and don't have any added sweeteners.

Freeze dried strawberries help to give the truffles a stronger strawberry flavor, and more sweetness, because they are naturally higher in sugar (like all dried fruits). The freeze drying process removes the water giving the strawberries a good crunch, and it allows them to retain many of their nutrients, including fiber. Freeze dried strawberries make a great addition to yogurt, oatmeal, chia pudding, or homemade trail mix.



Strawberries are an excellent source of fiber, Vitamin C, and manganese. They are also packed with powerful antioxidant and anti-inflammatory phytonutrients (like ellagic acid, anthocyanins, and flavonols). Best of all strawberries have one of the lowest sugar contents of all fruits.



Ingredients

  • 2 cups fresh organic strawberries, quartered

  • 1 & 1/4 cup freeze dried organic strawberries

  • 3/4 cup coconut flour

  • 2 tablespoons water

  • 1 cup dark chocolate chips


Directions

  • Cover a baking sheet with parchment paper

  • In a blender, mix together fresh and freeze dried strawberries

  • In a large bowl combine strawberry puree, coconut flour, and water until a dough forms

  • Using teaspoon sized amount, roll into balls, place on baking sheet, and put in fridge for 1 hour or until firm

  • Melt chocolate chips using a double boiler or the microwave

  • Dip each ball in melted chocolate then place back on baking sheet

  • Refrigerate for 15 minutes or until chocolate is set


*While it's a good idea to always buy organic, conventional strawberries are one of the most contaminated foods, so it is extra important to get these organic.*
