Chocolate Chia Seed Pudding (gluten free, vegan, & paleo)
This pudding is packed with omega-3s and fiber, and is also a great source of plant based protein. With no refined sugar, it's healthy enough to have for breakfast, and delicious enough to have for dessert!
I'm only semi-embarrassed to admit that chocolate pudding is my ultimate guilty pleasure/comfort food. I obviously have a very sophisticated palate. My grandma always used to make pudding for us whenever she babysat, so on top of being delicious, eating this pudding brings back many happy memories.
5 simple ingredients and less than 5 minutes to make (not including fridge time). This is a perfect little dessert if you're hosting summer brunches or BBQs, because it won't take any of your time away from your guests. You literally just pull the jars out of the fridge along with some berries when you're ready, and dessert is served!
...and doesn't everything taste better when it's eaten out of mini mason jars?
2 cups unsweetened almond or coconut milk
1/3 cup chia seeds
1/4 cup unsweetened cocoa powder
1/4 cup maple syrup
1/2 teaspoon ground cinnamon
Add all ingredients to a large bowl and mix well
Divide between mini mason jars (or dishes of your choice) and cover
Chill in the fridge for at least 4 hours (I usually do overnight)
Serve with berries or other toppings
