Chocolate Drizzled Watermelon Pops



Because what says summer more than watermelon, and what fruit isn't instantly improved by adding dark chocolate?



Watermelon is packed with the antioxidant lycopene which has been shown to have cardioprotective effects and lower the risk of heart disease. Watermelon is also a good source of Vitamin C and Vitamin A. Vitamin A is a fat-soluble vitamin that requires fat for proper absorption, so adding rich dark chocolate not only makes watermelon more delicious but actually more nutritious!


Sometimes watermelon gets a bad wrap as being a high sugar fruit because it has a high Glycemic Index (GI). The GI, however, doesn’t consider the serving size or quality of a carbohydrate. A more accurate measurement of how a food will impact your blood sugar that takes into account a typical serving size is the Glycemic Load (GL). The GL of watermelon is low, because it has a high water content, and gram for gram it has lower sugar than most fruits.



Ingredients

  • 1 whole watermelon (sliced)

  • ½ cup dark chocolate (choose bars or chips with at least 70% cacao)

  • 1 teaspoon coconut oil

  • Popsicle sticks

Directions

  • Using the tip of a knife cut small holes in the rind of each slice and push popsticle stick in.

  • Line a baking sheet with parchment paper and spread watermelon slices out evenly.

  • Melt chocolate and coconut oil in microwave, stir well to combine. (The fats in the coconut oil will help the chocolate stay solid at room temperature).

  • Drizzle chocolate over the melon slices and place in refrigerator for 20-30 mins.

  • Enjoy!
