Double Chocolate Avocado Cookies (gluten free, paleo, & vegan)

These cookies are rich, soft, and chocolatey. They're made with avocado and flax making them a great source of healthy fats and fiber.



These cookies have a fudgy brownie-like texture and are rich in magnesium. This essential mineral is responsible for over 300 processes in the body including regulating your blood pressure and blood sugar.


Free of the top 8 allergens, these cookies are sure to be a winner for any chocolate lover!


Ingredients

  • 1/2 cups gluten free baking flour

  • 1/3 cup unsweetened cocoa powder

  • 1/3 cup coconut sugar

  • 1/2 teaspoon baking soda

  • 1 medium avocado

  • 2 tablespoons coconut oil (melted)

  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mix well and let sit for 5 minutes)

  • 1/4 cup chocolate chips

  • a pinch of salt for sprinkling on top



Directions

  • Preheat oven to 350F

  • Link baking sheet with parchment paper

  • In large bowl mix together baking flour, cocoa, coconut sugar, and baking soda

  • In small bowl mash avocado until smooth and stir in flax egg and coconut oil

  • Add wet ingredients to dry and mix until you have a thick dough

  • Fold in chocolate chips

  • Use cookie scoop to form balls and place on baking sheet (should be about 9)

  • Bake for 8-10 minutes

  • Remove from oven and let cool

  • Enjoy!
