Homemade Ice Cream Pops

Turn your favorite pint of ice cream into decadent pops in just 20 minutes!



With toppings like melted chocolate, coconut flakes, and chocolate chips, you can make this summer favorite right at home.


Note: If you make the slices too thin, they might break apart when you insert the popsicle stick. You may want to purchase an extra pint so you have a back up.

Ingredients

  • 1 pint of your favorite ice cream

  • 1 cup chocolate chips

  • 1 teaspoon coconut oil

  • 4 popsicle sticks

  • Your favorite toppings


Directions

  • Cover a baking sheet with parchment paper and place in freezer.

  • Add coconut oil and chocolate chips to bowl and melt in microwave (~90 seconds).

  • Run a large knife under hot water and slice ice cream into 1 inch peaces. Thicker slices are ideal because they will hold up better.

  • Remove baking sheet from freezer. Insert popsicle stick into each slice and place ice cream on baking sheet to keep them cold.

  • Dip popsicles in melted chocolate and finish with your favorite toppings. Place back on baking sheet.

  • Put baking sheet with popsicles back in freezer for 15 minutes.

  • Enjoy!
